Torta De Alfajor (alfajor Cheesecake)
Torta de Alfajor, also known as Alfajor Cheesecake, is a delightful dessert that combines the flavors of the traditional Argentinian alfajor with a creamy cheesecake. This decadent treat is perfect for special occasions or as a sweet indulgence.
Ingredients
- 1 1/2 cups crushed graham crackers
- 1/3 cup melted butter
- 1/4 cup granulated sugar
- 3 (8-ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup dulce de leche
- 1/2 cup heavy cream
- 1/4 cup powdered sugar
- 1/2 teaspoon ground cinnamon
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9-inch springform pan.
- In a bowl, mix the crushed graham crackers, melted butter, and 1/4 cup of granulated sugar. Press the mixture into the bottom of the prepared pan.
- In a large bowl, beat the cream cheese, 1 cup of granulated sugar, and vanilla extract until smooth. Beat in the eggs one at a time, mixing well after each addition. Pour the mixture over the crust.
- Bake for 45-50 minutes, or until the center is almost set. Allow the cheesecake to cool completely, then refrigerate for at least 4 hours or overnight.
- In a small bowl, mix the dulce de leche and heavy cream. Spread the mixture over the chilled cheesecake.
- In another bowl, combine the powdered sugar and ground cinnamon. Dust the top of the cheesecake with the cinnamon-sugar mixture.
- Refrigerate for another 30 minutes before serving.
