Torta De Alfajor (alfajor Cheesecake)

Ingredients

  • 1 1/2 cups crushed graham crackers
  • 1/3 cup melted butter
  • 1/4 cup granulated sugar
  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup dulce de leche
  • 1/2 cup heavy cream
  • 1/4 cup powdered sugar
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. In a bowl, mix the crushed graham crackers, melted butter, and 1/4 cup of granulated sugar. Press the mixture into the bottom of the prepared pan.
  3. In a large bowl, beat the cream cheese, 1 cup of granulated sugar, and vanilla extract until smooth. Beat in the eggs one at a time, mixing well after each addition. Pour the mixture over the crust.
  4. Bake for 45-50 minutes, or until the center is almost set. Allow the cheesecake to cool completely, then refrigerate for at least 4 hours or overnight.
  5. In a small bowl, mix the dulce de leche and heavy cream. Spread the mixture over the chilled cheesecake.
  6. In another bowl, combine the powdered sugar and ground cinnamon. Dust the top of the cheesecake with the cinnamon-sugar mixture.
  7. Refrigerate for another 30 minutes before serving.
