Torta De Tres Leches De Coco (coconut Tres Leches Cake)
Torta de Tres Leches de Coco, or Coconut Tres Leches Cake, is a popular dessert in Nicaraguan cuisine. This moist and decadent cake is soaked in a mixture of three different milks, including coconut milk, and topped with whipped cream and toasted coconut.
Ingredients
- 1 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 5 large eggs
- 1 teaspoon vanilla extract
- 1 can (13.5 oz) coconut milk
- 1 can (14 oz) sweetened condensed milk
- 1 cup whole milk
- 1 1/2 cups heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup shredded coconut, toasted
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9x13 inch baking dish.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Gradually blend in the flour mixture. Spread the batter evenly into the prepared pan.
- Bake for 30 minutes, or until a toothpick inserted into the center comes out clean. Pierce the hot cake all over with a fork.
- In a large bowl, combine the coconut milk, sweetened condensed milk, and whole milk. Pour over the top of the cooled cake.
- In a medium bowl, whip the heavy cream, powdered sugar, and vanilla until thick and spreadable. Spread over the top of cake.
- Sprinkle the toasted coconut over the whipped cream. Refrigerate for at least 2 hours before serving.
