Torta De Yuca (cassava Cake)

Ingredients

  • 2 lbs cassava, peeled and grated
  • 1 can (14 oz) sweetened condensed milk
  • 1 can (13.5 oz) coconut milk
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 cup sugar
  • 1/2 cup butter, melted
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  2. In a large bowl, mix the grated cassava, sweetened condensed milk, coconut milk, eggs, vanilla extract, sugar, melted butter, and ground cinnamon until well combined.
  3. Pour the mixture into the prepared baking dish and smooth the top with a spatula.
  4. Bake in the preheated oven for 45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
