Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cut into small pieces
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 egg yolk
  • 1/4 cup cold water
  • 1 cup apricot jam
  • 1/2 cup ground almonds
  • 1/2 teaspoon almond extract
  • 1/2 cup sliced almonds

Instructions

  1. In a large bowl, mix the flour, sugar, and salt. Add the cold butter and mix until the mixture resembles coarse crumbs.
  2. In a small bowl, whisk together the egg yolk and cold water. Gradually add the egg mixture to the flour mixture, stirring until the dough comes together.
  3. Divide the dough in half and shape each half into a disk. Wrap in plastic wrap and refrigerate for 30 minutes.
  4. Preheat the oven to 350°F (175°C). Roll out one disk of dough and press it into the bottom of a tart pan. Spread the apricot jam over the dough.
  5. In a small bowl, mix the ground almonds and almond extract. Sprinkle this mixture over the apricot jam.
  6. Roll out the second disk of dough and place it over the almond mixture. Sprinkle the sliced almonds on top.
  7. Bake for 40 minutes, or until the tart is golden brown. Allow to cool before serving.
