Torta Delle Tre Torri (three Towers Tart)
The Torta delle Tre Torri, or Three Towers Tart, is a traditional dessert from San Marino, a small country in the Apennine Mountains. This delicious tart is named after the three towers that overlook the capital city of San Marino. Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cut into small pieces
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1 egg yolk
- 1/4 cup cold water
- 1 cup apricot jam
- 1/2 cup ground almonds
- 1/2 teaspoon almond extract
- 1/2 cup sliced almonds
Instructions
- In a large bowl, mix the flour, sugar, and salt. Add the cold butter and mix until the mixture resembles coarse crumbs.
- In a small bowl, whisk together the egg yolk and cold water. Gradually add the egg mixture to the flour mixture, stirring until the dough comes together.
- Divide the dough in half and shape each half into a disk. Wrap in plastic wrap and refrigerate for 30 minutes.
- Preheat the oven to 350°F (175°C). Roll out one disk of dough and press it into the bottom of a tart pan. Spread the apricot jam over the dough.
- In a small bowl, mix the ground almonds and almond extract. Sprinkle this mixture over the apricot jam.
- Roll out the second disk of dough and place it over the almond mixture. Sprinkle the sliced almonds on top.
- Bake for 40 minutes, or until the tart is golden brown. Allow to cool before serving.
