Ingredients
- 1 cup raisins
- 1 cup prunes, pitted and chopped
- 1 cup dried figs, chopped
- 1 cup dried apricots, chopped
- 1 cup dark rum
- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 4 eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground cloves
- 1 cup chopped walnuts
Instructions
- In a large bowl, combine the raisins, prunes, figs, apricots, and rum. Let it soak for at least 1 hour or overnight.
- Preheat the oven to 325°F (165°C). Grease and flour a 9-inch round cake pan.
- In a separate bowl, cream the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
- In another bowl, sift together the flour, baking powder, cinnamon, nutmeg, and cloves. Gradually mix the dry ingredients into the wet ingredients.
- Stir in the soaked fruits and walnuts until well combined.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake in the preheated oven for 1 hour, or until a toothpick inserted into the center of the cake comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
