Ingredients

  • 1 cup raisins
  • 1 cup prunes, pitted and chopped
  • 1 cup dried figs, chopped
  • 1 cup dried apricots, chopped
  • 1 cup dark rum
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1 cup chopped walnuts

Instructions

  1. In a large bowl, combine the raisins, prunes, figs, apricots, and rum. Let it soak for at least 1 hour or overnight.
  2. Preheat the oven to 325°F (165°C). Grease and flour a 9-inch round cake pan.
  3. In a separate bowl, cream the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In another bowl, sift together the flour, baking powder, cinnamon, nutmeg, and cloves. Gradually mix the dry ingredients into the wet ingredients.
  5. Stir in the soaked fruits and walnuts until well combined.
  6. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  7. Bake in the preheated oven for 1 hour, or until a toothpick inserted into the center of the cake comes out clean.
  8. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
