Ingredients

Instructions
- In a large pot of boiling water, cook the pumpkin until tender. Drain and mash the pumpkin in a bowl.
- Add the grated Parmigiano-Reggiano cheese, nutmeg, salt, and pepper to the mashed pumpkin. Mix well to combine.
- Roll out the fresh pasta dough and cut it into small squares.
- Place a small amount of the pumpkin filling in the center of each pasta square. Fold the pasta over the filling to form a triangle, then press the edges to seal.
- Cook the tortelli in a large pot of boiling salted water for about 5-7 minutes, or until they float to the surface.
- Remove the tortelli with a slotted spoon and serve hot, optionally with a drizzle of melted butter and a sprinkle of Parmigiano-Reggiano cheese.
