Tortilla Española (spanish Omelette) Breakfast Burritos
These breakfast burritos are a delicious fusion of Spanish and Mexican cuisines, combining the flavors of a traditional Spanish omelette with the convenience of a handheld burrito. Perfect for a hearty breakfast or brunch!
Ingredients
- 6 eggs
- 2 large potatoes, thinly sliced
- 1 onion, thinly sliced
- 1/2 cup olive oil
- Salt and pepper to taste
- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- Salsa, for serving
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the sliced potatoes and onions, and cook until the potatoes are tender. Remove from the skillet and drain on paper towels.
- In a large bowl, beat the eggs and season with salt and pepper. Add the cooked potatoes and onions to the bowl and mix to combine.
- Wipe the skillet clean and return to medium heat. Pour the egg mixture into the skillet and cook until the edges are set. Flip the omelette and cook until the other side is set.
- Divide the omelette into 4 equal portions. Place each portion on a flour tortilla, top with shredded cheddar cheese, and roll up into a burrito.
- Optional: Heat the burritos in a skillet until the tortillas are crispy and the cheese is melted.
- Serve the breakfast burritos with salsa on the side.
