Ingredients
- 1 cup of gofio
- 1 ripe banana, mashed
- 1 teaspoon of baking powder
- 1 tablespoon of honey
- 1 cup of milk
- 1 egg
- Pinch of salt

Instructions
- In a bowl, mix the gofio, mashed banana, baking powder, honey, milk, egg, and salt until well combined.
- Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
- Pour a ladleful of the batter onto the skillet and spread it slightly to form a small pancake.
- Cook for 2-3 minutes on each side, or until golden brown.
- Repeat with the remaining batter.
- Serve the tortitas de gofio warm, with toppings of your choice.
