Ingredients

  • 2 lbs yuca, peeled and grated
  • 1/2 cup all-purpose flour
  • 2 eggs
  • 1/4 cup milk

  • 1/4 cup chopped cilantro
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Oil for frying

Instructions

  1. In a large bowl, mix the grated yuca, flour, eggs, milk, cheese, cilantro, salt, and black pepper until well combined.
  2. Heat oil in a frying pan over medium heat.
  3. Scoop a spoonful of the yuca mixture and carefully place it in the hot oil, flattening it slightly with the back of the spoon to form a fritter.
  4. Fry the fritters for 3-4 minutes on each side, or until golden brown and crispy.
  5. Remove the fritters from the oil and place them on a paper towel to drain any excess oil.
