Ingredients
- 2 lbs yuca, peeled and grated
- 1/2 cup all-purpose flour
- 2 eggs
- 1/4 cup milk
- 1/2 cup grated cheese
- 1/4 cup chopped cilantro
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Oil for frying
Instructions
- In a large bowl, mix the grated yuca, flour, eggs, milk, cheese, cilantro, salt, and black pepper until well combined.
- Heat oil in a frying pan over medium heat.
- Scoop a spoonful of the yuca mixture and carefully place it in the hot oil, flattening it slightly with the back of the spoon to form a fritter.
- Fry the fritters for 3-4 minutes on each side, or until golden brown and crispy.
- Remove the fritters from the oil and place them on a paper towel to drain any excess oil.
- Serve the tortitas de yuca hot and enjoy!
