Ingredients

  • 2 green plantains, peeled and cut into 1-inch slices

  • 3 cloves garlic, minced
  • 1/4 cup fresh orange juice
  • 2 tablespoons fresh lime juice
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat vegetable oil over medium-high heat.
  2. Add the plantain slices and fry for 2-3 minutes on each side, until golden brown and crispy. Remove from the skillet and place on a paper towel-lined plate to drain excess oil.
  3. Using a tostonera or the bottom of a heavy glass, flatten the fried plantain slices to about 1/4-inch thickness.
  4. Return the flattened plantains to the skillet and fry for an additional 2-3 minutes on each side until crispy. Remove from the skillet and sprinkle with salt.
  5. To make the mojo sauce, heat the olive oil in a small saucepan over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant but not browned.
  6. Stir in the orange juice, lime juice, cumin, oregano, salt, and pepper. Simmer for 2-3 minutes, then remove from heat.
  7. Serve the tostones with the mojo sauce on the side for dipping.
