Tostones (fried Green Plantain)
Tostones, also known as fried green plantains, are a popular dish in Saint Lucian cuisine. They are crispy on the outside and tender on the inside, making them a delicious and versatile side dish or snack.
Ingredients
- 2 green plantains
- Vegetable oil for frying
- Salt to taste
Instructions
- Peel the plantains and cut them into 1-inch thick slices.
- Heat the vegetable oil in a frying pan over medium heat.
- Fry the plantain slices for 2-3 minutes on each side, or until golden brown.
- Remove the fried plantains from the oil and place them on a paper towel to drain excess oil.
- Flatten the fried plantains using a tostonera or the bottom of a heavy glass.
- Return the flattened plantains to the hot oil and fry for an additional 2-3 minutes on each side, or until crispy and golden brown.
- Remove the tostones from the oil, sprinkle with salt, and serve hot.
