Ingredients

  • 3 heads of garlic, peeled
  • 1 teaspoon salt
  • 3 cups vegetable oil
  • 1/4 cup fresh lemon juice
  • 2-3 tablespoons ice-cold water

Instructions

  1. In a food processor, blend the garlic and salt until smooth.
  2. With the food processor running, slowly drizzle in the vegetable oil until the mixture is thick and creamy.
  3. Add the lemon juice and continue to blend until well combined.
  4. If the mixture is too thick, add ice-cold water, 1 tablespoon at a time, until the desired consistency is reached.
  5. Transfer the toum to a jar and refrigerate for at least 2 hours before serving.
