Tourte De Blettes: Swiss Chard Tart
Tourte de Blettes is a traditional Swiss chard tart from Occitan cuisine. This delicious dessert combines the earthy flavors of Swiss chard with the sweetness of raisins and pine nuts, all encased in a flaky pastry crust.
Ingredients
- 1 1/2 pounds Swiss chard, stems removed and leaves chopped
- 1/2 cup raisins
- 1/2 cup pine nuts
- 1/2 cup sugar
- 1/4 cup olive oil
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 2 sheets of puff pastry, thawed
- 1 tablespoon powdered sugar, for dusting
Instructions
- In a large pot of boiling water, blanch the Swiss chard for 3 minutes. Drain and squeeze out excess water.
- In a large bowl, combine the blanched Swiss chard, raisins, pine nuts, sugar, olive oil, cinnamon, nutmeg, and salt.
- Preheat the oven to 375°F (190°C).
- Line a 9-inch tart pan with one sheet of puff pastry.
- Spoon the Swiss chard mixture into the pastry-lined pan.
- Place the second sheet of puff pastry over the filling and crimp the edges to seal.
- Make a few slits in the top pastry to allow steam to escape.
- Bake for 45 minutes, or until the pastry is golden brown.
- Let the tart cool, then dust with powdered sugar before serving.
