Tourte Morue Et Fig (saltfish And Green Fig Pie)
Tourte Morue et Fig, or Saltfish and Green Fig Pie, is a traditional dish from Saint Lucian cuisine. This savory pie is made with salted codfish and green bananas, and it's a popular comfort food in the Caribbean.
Ingredients
- 2 cups salted codfish, flaked
- 6 green bananas, peeled and sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 tomato, chopped
- 1/4 cup parsley, chopped
- 1/4 cup green seasoning (blend of herbs and spices)
- 1/4 cup coconut milk
- 2 tablespoons olive oil
- Salt and pepper to taste
- Pastry dough for pie crust
Instructions
- Boil the green bananas in salted water until tender, then drain and mash them.
- In a large skillet, heat olive oil and sauté the onion, garlic, bell pepper, and tomato until softened.
- Add the flaked salted codfish to the skillet and cook for 5 minutes.
- Stir in the mashed green bananas, green seasoning, coconut milk, and parsley. Season with salt and pepper to taste.
- Roll out the pastry dough and line a pie dish with it. Pour the saltfish and green banana mixture into the pie crust.
- Cover the pie with another layer of pastry dough, seal the edges, and make a few slits on top for steam to escape.
- Bake in a preheated oven at 375°F (190°C) for 30-35 minutes, or until the crust is golden brown.
