Ingredients

  • 2 cups salted codfish, flaked
  • 6 green bananas, peeled and sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 tomato, chopped
  • 1/4 cup parsley, chopped
  • 1/4 cup green seasoning (blend of herbs and spices)
  • 1/4 cup coconut milk
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Pastry dough for pie crust

Instructions

  1. Boil the green bananas in salted water until tender, then drain and mash them.
  2. In a large skillet, heat olive oil and sauté the onion, garlic, bell pepper, and tomato until softened.
  3. Add the flaked salted codfish to the skillet and cook for 5 minutes.
  4. Stir in the mashed green bananas, green seasoning, coconut milk, and parsley. Season with salt and pepper to taste.
  5. Roll out the pastry dough and line a pie dish with it. Pour the saltfish and green banana mixture into the pie crust.
  6. Cover the pie with another layer of pastry dough, seal the edges, and make a few slits on top for steam to escape.
  7. Bake in a preheated oven at 375°F (190°C) for 30-35 minutes, or until the crust is golden brown.
  8. Serve the Tourte Morue et Fig hot and enjoy!
