Traditional Bashkir Honey Cake, known as "медовик" (medovik), is a beloved dessert in Bashkir cuisine. This multi-layered cake is made with honey and sour cream, resulting in a sweet and creamy treat that is perfect for special occasions or gatherings.
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 cup honey
- 1 cup granulated sugar
- 1 cup unsalted butter, softened
- 2 cups sour cream
Instructions
- In a bowl, combine the flour and baking soda. Set aside.
- In a saucepan, heat the honey until it becomes more liquid. Remove from heat and let it cool slightly.
- In a large mixing bowl, cream together the sugar and butter. Gradually add the flour mixture and mix until a dough forms.
- Divide the dough into 8 equal parts and roll each part into a thin circle. Place the circles on a baking sheet and bake at 350°F for 8-10 minutes, or until lightly golden. Let them cool completely.
- Whip the sour cream until it becomes thick and creamy.
- Place one baked circle on a serving plate and spread a layer of sour cream on top. Repeat with the remaining circles, stacking them on top of each other with sour cream between each layer.
- Spread the remaining sour cream on the top and sides of the cake. Refrigerate for at least 4 hours before serving.
