Ingredients

  • 2 cups all-purpose flour
  • 1 3/4 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 2 cups heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 can (21 oz) cherry pie filling

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, combine flour, sugar, cocoa, baking powder, baking soda, and salt. Add eggs, milk, oil, and vanilla extract; beat on medium speed for 2 minutes. Stir in boiling water. The batter will be thin. Pour evenly into prepared pans.
  3. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean. Cool in pans for 10 minutes, then remove from pans to wire racks to cool completely.
  4. For the whipped cream, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  5. To assemble the cake, place one cake layer on a serving plate. Spread with half of the whipped cream and top with half of the cherry pie filling. Repeat with the second cake layer, remaining whipped cream, and cherry pie filling.
  6. Refrigerate for at least 1 hour before serving.
