Ingredients

  • 1 cup whole almonds
  • 1 cup honey

Instructions

  1. Preheat the oven to 350°F (175°C). Spread the almonds on a baking sheet and toast in the oven for 10 minutes, or until fragrant. Let cool, then chop coarsely.
  2. In a saucepan, combine the honey and sugar. Cook over medium heat, stirring constantly, until the mixture reaches 280°F (138°C) on a candy thermometer.
  3. In a separate bowl, beat the egg whites until stiff peaks form. Gradually pour the hot honey mixture into the egg whites, beating constantly until the mixture is thick and glossy.
  4. Fold in the chopped almonds and cinnamon until well combined.
  5. Pour the mixture into a parchment-lined 8x8 inch baking dish, smoothing the top with a spatula. Let the turrón cool and set at room temperature for at least 4 hours.
  6. Once set, cut the turrón into small squares and serve.
