Traditional Catalan Christmas Cake (Turrón)

Ingredients
- 1 cup whole almonds
- 1 cup honey
- 1/2 cup sugar
- 2 egg whites
- 1/4 teaspoon ground cinnamon
Instructions
- Preheat the oven to 350°F (175°C). Spread the almonds on a baking sheet and toast in the oven for 10 minutes, or until fragrant. Let cool, then chop coarsely.
- In a saucepan, combine the honey and sugar. Cook over medium heat, stirring constantly, until the mixture reaches 280°F (138°C) on a candy thermometer.
- In a separate bowl, beat the egg whites until stiff peaks form. Gradually pour the hot honey mixture into the egg whites, beating constantly until the mixture is thick and glossy.
- Fold in the chopped almonds and cinnamon until well combined.
- Pour the mixture into a parchment-lined 8x8 inch baking dish, smoothing the top with a spatula. Let the turrón cool and set at room temperature for at least 4 hours.
- Once set, cut the turrón into small squares and serve.
