Traditional Fruit Bread (guernsey Gâche)
Traditional fruit bread, known as Guernsey Gâche, is a classic dish from the Channel Islands cuisine. This sweet bread is filled with dried fruits and is perfect for breakfast or as a snack with a cup of tea.
Ingredients
- 500g all-purpose flour
- 7g active dry yeast
- 50g sugar
- 1 tsp salt
- 100g unsalted butter, softened
- 200ml warm milk
- 100g raisins
- 100g currants
- 50g mixed peel
Instructions
- In a large bowl, combine the flour, yeast, sugar, and salt.
- Add the softened butter and warm milk to the dry ingredients. Mix until a dough forms.
- Knead the dough on a floured surface for 5-7 minutes, then place it back in the bowl and cover with a clean kitchen towel. Let it rise for 1 hour.
- After the dough has risen, knead in the raisins, currants, and mixed peel until evenly distributed.
- Shape the dough into a loaf and place it in a greased loaf pan. Cover and let it rise for another 30 minutes.
- Preheat the oven to 180°C (350°F). Bake the fruit bread for 45-50 minutes, or until golden brown.
- Let the Guernsey Gâche cool before slicing and serving.
