Traditional Jordanian Lamb And Rice Dish (mansaf)

Ingredients

  • 2 lbs lamb, cut into chunks
  • 2 cups plain yogurt
  • 1 large onion, finely chopped
  • 1/4 cup pine nuts
  • 2 cups long-grain rice
  • 1/4 teaspoon ground turmeric
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground allspice
  • Salt and pepper to taste
  • 1/4 cup ghee or clarified butter
  • 4 cups water

Instructions

  1. In a large pot, brown the lamb chunks over medium heat.
  2. Add the chopped onion and continue cooking until the onion is soft and translucent.
  3. Pour in the yogurt and add the spices. Stir well to combine.
  4. Add water to the pot, cover, and let the lamb simmer for 1.5 hours or until tender.
  5. In a separate pan, toast the pine nuts until golden brown. Set aside.
  6. Rinse the rice and place it in a pot. Add water, salt, and ghee. Bring to a boil, then reduce the heat and let it simmer until the rice is cooked.
  7. Once the lamb is tender and the rice is cooked, arrange the rice on a large serving platter.
  8. Place the lamb and yogurt sauce on top of the rice, then sprinkle the toasted pine nuts over the dish.
