Traditional Lampuki Pie (torta Tal-lampuki)
Traditional Lampuki Pie, also known as Torta tal-Lampuki, is a classic dish in Maltese cuisine. This savory pie is filled with lampuki fish, vegetables, and herbs, all encased in a flaky pastry crust.
Ingredients
- 500g lampuki fish, cleaned and filleted
- 2 onions, finely chopped
- 3 tomatoes, diced
- 1 green pepper, diced
- 1 red pepper, diced
- 2 garlic cloves, minced
- Handful of parsley, chopped
- Handful of mint, chopped
- Salt and pepper to taste
- 500g shortcrust pastry
- Olive oil for frying
Instructions
- Preheat the oven to 180°C (350°F).
- Heat some olive oil in a pan and sauté the onions and garlic until translucent.
- Add the diced tomatoes, green pepper, and red pepper to the pan. Cook for 5 minutes.
- Add the lampuki fish fillets to the pan and cook for another 5 minutes.
- Stir in the chopped parsley and mint. Season with salt and pepper.
- Roll out the shortcrust pastry and line a pie dish with it.
- Pour the fish and vegetable mixture into the pastry-lined dish.
- Cover the pie with another layer of pastry, sealing the edges. Cut a few slits on the top for steam to escape.
- Bake in the preheated oven for 30-35 minutes, or until the pastry is golden brown.
- Remove from the oven and let it cool slightly before slicing and serving.
