Traditional Maltese Pasta Salad (kusksu Salad)

Ingredients

  • 500g kusksu pasta
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 can (400g) of butter beans, drained and rinsed
  • 1 can (400g) of chopped tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon dried mint
  • 1 teaspoon dried marjoram
  • 1 teaspoon paprika
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish
  • Freshly grated ġbejna (Maltese cheese) for serving (optional)

Instructions

  1. In a large pot, sauté the onion and garlic until softened.
  2. Add the butter beans, chopped tomatoes, tomato paste, dried mint, marjoram, and paprika. Stir to combine.
  3. Pour in the vegetable broth and bring the mixture to a simmer.
  4. Add the kusksu pasta and cook until al dente, about 10-12 minutes.
  5. Season with salt and pepper to taste.
  6. Serve the Kusksu Salad in bowls, garnished with freshly chopped parsley and grated ġbejna, if desired.
