Ingredients
- 500g kusksu pasta
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 can (400g) of butter beans, drained and rinsed
- 1 can (400g) of chopped tomatoes
- 1 tablespoon tomato paste
- 1 teaspoon dried mint
- 1 teaspoon dried marjoram
- 1 teaspoon paprika
- 4 cups vegetable broth
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
- Freshly grated ġbejna (Maltese cheese) for serving (optional)
Instructions
- In a large pot, sauté the onion and garlic until softened.
- Add the butter beans, chopped tomatoes, tomato paste, dried mint, marjoram, and paprika. Stir to combine.
- Pour in the vegetable broth and bring the mixture to a simmer.
- Add the kusksu pasta and cook until al dente, about 10-12 minutes.
- Season with salt and pepper to taste.
- Serve the Kusksu Salad in bowls, garnished with freshly chopped parsley and grated ġbejna, if desired.
