Ingredients
- 1 whole chicken, cut into pieces
- 8 cups chicken broth
- 2 carrots, sliced
- 2 potatoes, diced
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 2 tablespoons chopped cilantro
- 2 tablespoons lime juice
Instructions
- In a large pot, bring the chicken broth to a boil.
- Add the chicken pieces, carrots, potatoes, onion, garlic, oregano, and cumin to the pot.
- Reduce the heat to a simmer and cook for 45 minutes, or until the chicken is cooked through and the vegetables are tender.
- Remove the chicken pieces from the pot and shred the meat using two forks. Discard the bones and return the shredded chicken to the pot.
- Season the soup with salt and pepper to taste.
