Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup warm water
  • 2 tbsp sugar
  • 1 tsp active dry yeast
  • 1/4 cup loose leaf tea
  • 1/4 cup boiling water
  • 1/4 cup sugar

Instructions

  1. In a small bowl, dissolve 1 tsp of sugar in warm water. Sprinkle the yeast over the water and let it sit for 5 minutes until foamy.
  2. In a large bowl, mix the flour and 1 tbsp of sugar. Add the yeast mixture and knead until a smooth dough forms. Cover and let it rise for 1 hour.
  3. Meanwhile, steep the loose leaf tea in boiling water for 5 minutes. Strain the tea leaves and mix the tea with 1/4 cup of sugar in a small bowl.
  4. Divide the dough into 12 equal pieces and roll each piece into a small circle. Place a spoonful of the tea-sugar mixture in the center of each circle and seal the dough around the filling.
  5. Place the buns on a steamer lined with parchment paper and steam for 15 minutes.
