Transylvanian Beef and Potato Stew (Marhapörkölt Krumplival)
Marhapörkölt Krumplival, also known as Transylvanian Beef and Potato Stew, is a traditional dish from Transylvanian Saxon cuisine. This hearty stew is packed with tender beef, flavorful paprika, and hearty potatoes, making it a perfect comfort food for cold winter days.
Ingredients
- 1.5 kg beef, cut into cubes
- 4 large potatoes, peeled and diced
- 2 onions, finely chopped
- 3 cloves garlic, minced
- 2 tbsp sweet paprika
- 1 tsp caraway seeds
- 2 bay leaves
- Salt and pepper to taste
- 3 tbsp vegetable oil
- 500 ml beef broth
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the onions and sauté until translucent.
- Add the beef cubes and brown on all sides.
- Stir in the garlic, sweet paprika, and caraway seeds, and cook for 2 minutes.
- Pour in the beef broth, add the bay leaves, and season with salt and pepper.
- Cover and simmer for 1.5 hours, stirring occasionally.
- Add the diced potatoes and continue to simmer for another 30 minutes or until the potatoes are tender.
- Adjust the seasoning if needed and serve hot.
