Transylvanian Beef and Potato Stew (Marhapörkölt Krumplival)

Ingredients

  • 1.5 kg beef, cut into cubes
  • 4 large potatoes, peeled and diced
  • 2 onions, finely chopped
  • 3 cloves garlic, minced
  • 2 tbsp sweet paprika
  • 1 tsp caraway seeds
  • 2 bay leaves
  • Salt and pepper to taste
  • 3 tbsp vegetable oil
  • 500 ml beef broth

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the onions and sauté until translucent.
  3. Add the beef cubes and brown on all sides.
  4. Stir in the garlic, sweet paprika, and caraway seeds, and cook for 2 minutes.
  5. Pour in the beef broth, add the bay leaves, and season with salt and pepper.
  6. Cover and simmer for 1.5 hours, stirring occasionally.
  7. Add the diced potatoes and continue to simmer for another 30 minutes or until the potatoes are tender.
  8. Adjust the seasoning if needed and serve hot.
