Transylvanian Cabbage Soup (Káposztaleves)
Káposztaleves is a traditional Transylvanian Saxon cabbage soup that is hearty, flavorful, and perfect for cold weather.
Ingredients
- 1 head of cabbage, shredded
- 2 onions, chopped
- 3 carrots, sliced
- 2 potatoes, diced
- 1 can of diced tomatoes
- 6 cups of vegetable broth
- 1 teaspoon of paprika
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onions until translucent.
- Add the carrots, potatoes, and cabbage to the pot and cook for 5 minutes.
- Pour in the vegetable broth and diced tomatoes. Season with paprika, salt, and pepper.
- Simmer for 1 hour until the vegetables are tender.
- Serve hot and enjoy!
