Transylvanian Cheese and Spinach Strudel (Spenótos Sajtos Rétes)
Spenótos Sajtos Rétes, or Transylvanian Cheese and Spinach Strudel, is a traditional dish from Transylvanian Saxon cuisine. This savory pastry is filled with a delicious mixture of cheese and spinach, wrapped in layers of flaky phyllo dough, and baked to golden perfection.
Ingredients
- 6 sheets phyllo dough
- 1/2 cup melted butter
- 1 cup feta cheese, crumbled
- 1 cup cottage cheese
- 2 cups fresh spinach, chopped
- 1/4 cup green onions, chopped
- 2 eggs, beaten
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix together the feta cheese, cottage cheese, spinach, green onions, eggs, salt, and pepper.
- Place one sheet of phyllo dough on a clean surface and brush it with melted butter. Repeat with the remaining sheets, stacking them on top of each other.
- Spoon the cheese and spinach mixture along one edge of the phyllo stack, leaving some space at the edges. Roll up the phyllo, tucking in the sides as you go, to form a strudel.
- Place the strudel on a baking sheet and brush the top with melted butter.
- Bake for 40-45 minutes, or until the strudel is golden brown and crispy.
- Let it cool for a few minutes, then slice and serve.
