Transylvanian Chicken and Dumplings (Csirkeleves Tésztával)

Ingredients

  • 1 whole chicken, cut into pieces
  • 2 onions, chopped
  • 3 carrots, sliced
  • 3 celery stalks, chopped
  • 1 parsnip, sliced
  • 1 bay leaf
  • 1 teaspoon peppercorns
  • 1 teaspoon salt
  • 200g flour
  • 2 eggs
  • Water

Instructions

  1. In a large pot, combine the chicken pieces, onions, carrots, celery, parsnip, bay leaf, peppercorns, and salt. Add enough water to cover the ingredients.
  2. Bring the pot to a boil, then reduce the heat and let it simmer for 45 minutes to 1 hour, until the chicken is cooked through and the flavors have melded.
  3. While the soup is simmering, prepare the dumplings. In a bowl, mix the flour and eggs, then gradually add water until a smooth dough forms.
  4. Roll out the dough on a floured surface and cut it into small squares.
  5. Add the dumplings to the soup and cook for an additional 10 minutes, until they are tender.
  6. Remove the bay leaf and serve the Csirkeleves Tésztával hot.
