Székelygulyás, also known as Transylvanian Goulash, is a traditional dish from the Transylvanian Saxon cuisine. This hearty stew is packed with flavor and is perfect for a comforting meal on a cold day.

Transylvanian Goulash (Székelygulyás)

Ingredients

  • 1 kg pork shoulder, cubed
  • 2 onions, chopped
  • 3 garlic cloves, minced
  • 2 tbsp sweet paprika
  • 1 tsp caraway seeds
  • 2 tomatoes, diced
  • 2 green peppers, sliced
  • 200 ml sour cream
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the pork cubes over medium heat.
  2. Add the chopped onions and minced garlic, and cook until the onions are soft.
  3. Stir in the sweet paprika and caraway seeds, then add the diced tomatoes and sliced green peppers.
  4. Cover the pot and simmer for 1.5 hours, stirring occasionally.
  5. Stir in the sour cream and season with salt and pepper. Simmer for an additional 15 minutes.
  6. Serve hot and enjoy!
