Transylvanian Potato Pancakes (Burgonyás Lángos)
Burgonyás Lángos, also known as Transylvanian Potato Pancakes, is a traditional dish from Transylvanian Saxon cuisine. These savory pancakes are made with grated potatoes, flour, and seasonings, then fried until crispy and golden brown. They are perfect for breakfast, brunch, or as a side dish for any meal.
Ingredients
- 2 large potatoes, peeled and grated
- 1 small onion, grated
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup vegetable oil for frying
Instructions
- Place the grated potatoes in a clean kitchen towel and squeeze out as much liquid as possible.
- In a large bowl, combine the grated potatoes, grated onion, flour, salt, and black pepper. Mix well to form a batter.
- Heat the vegetable oil in a large skillet over medium heat.
- Scoop a heaping spoonful of the potato batter and carefully place it in the hot oil, flattening it with the back of the spoon to form a pancake shape.
- Cook the pancake for 3-4 minutes on each side, or until golden brown and crispy.
- Transfer the cooked pancake to a paper towel-lined plate to drain any excess oil.
- Repeat with the remaining batter, adding more oil to the skillet as needed.
- Serve the Burgonyás Lángos hot, with sour cream or your favorite toppings.
