Transylvanian Pumpkin Soup (Tökkrémleves)

Ingredients

  • 1 small pumpkin, peeled and cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 1/4 teaspoon nutmeg
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  2. Add the cubed pumpkin to the pot and pour in the vegetable broth. Bring to a boil, then reduce the heat and let it simmer for 20 minutes, or until the pumpkin is tender.
  3. Using an immersion blender, purée the soup until smooth. If you don't have an immersion blender, carefully transfer the soup to a regular blender in batches and blend until smooth.
  4. Return the puréed soup to the pot and stir in the heavy cream. Season with salt, pepper, and nutmeg to taste. Simmer for an additional 5 minutes.
  5. Serve the Tökkrémleves hot, garnished with a drizzle of cream and a sprinkle of nutmeg if desired.
