Transylvanian Pumpkin Soup (Tökkrémleves)
Tökkrémleves, or Transylvanian Pumpkin Soup, is a traditional dish from the Transylvanian Saxon cuisine. This creamy and flavorful soup is perfect for the autumn season and makes for a comforting meal.
Ingredients
- 1 small pumpkin, peeled and cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- 1/4 teaspoon nutmeg
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the cubed pumpkin to the pot and pour in the vegetable broth. Bring to a boil, then reduce the heat and let it simmer for 20 minutes, or until the pumpkin is tender.
- Using an immersion blender, purée the soup until smooth. If you don't have an immersion blender, carefully transfer the soup to a regular blender in batches and blend until smooth.
- Return the puréed soup to the pot and stir in the heavy cream. Season with salt, pepper, and nutmeg to taste. Simmer for an additional 5 minutes.
- Serve the Tökkrémleves hot, garnished with a drizzle of cream and a sprinkle of nutmeg if desired.
