Transylvanian Stew (Pörkölt)

Ingredients

  • 2 lbs beef, cut into cubes
  • 2 onions, chopped
  • 3 tablespoons Hungarian sweet paprika
  • 2 cloves garlic, minced
  • 2 tomatoes, diced
  • 2 bell peppers, sliced
  • Salt and pepper to taste
  • 2 cups beef broth

Instructions

  1. In a large pot, heat some oil over medium heat. Add the onions and sauté until translucent.
  2. Add the beef cubes to the pot and brown on all sides.
  3. Stir in the paprika and garlic, then add the tomatoes and bell peppers. Season with salt and pepper.
  4. Pour in the beef broth and bring the stew to a simmer. Cover and cook for about 2 hours, or until the meat is tender.
