Transylvanian Stuffed Peppers (Töltött Paprika)

Ingredients

  • 4 large bell peppers
  • 1 cup cooked rice
  • 1 lb ground pork
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup tomato sauce
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, mix together the cooked rice, ground pork, onion, garlic, tomato sauce, paprika, salt, pepper, and parsley.
  4. Stuff the bell peppers with the pork and rice mixture.
  5. Place the stuffed peppers in a baking dish and cover with foil.
  6. Bake for 45 minutes, then remove the foil and bake for an additional 15 minutes until the peppers are tender and the filling is cooked through.
  7. Serve the stuffed peppers hot and enjoy!
