Tregaron Tofu and Mushroom Stir-Fry is a delicious and healthy dish from the Cuisine of Ceredigion. This vegetarian stir-fry is packed with flavor and nutrients, making it a perfect choice for a quick and easy weeknight meal.
Ingredients
- 1 block of firm tofu, drained and cubed
- 2 cups of mushrooms, sliced
- 1 red bell pepper, sliced
- 1 onion, sliced
- 3 cloves of garlic, minced
- 1 tablespoon of ginger, grated
- 3 tablespoons of soy sauce
- 1 tablespoon of sesame oil
- 2 tablespoons of vegetable oil
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a large skillet over medium-high heat.
- Add tofu cubes and cook until golden brown on all sides. Remove from the skillet and set aside.
- In the same skillet, add a bit more oil if needed and sauté the onion, garlic, and ginger until fragrant.
- Add the mushrooms and bell pepper, and cook until they start to soften.
- Return the tofu to the skillet and stir in the soy sauce and sesame oil. Cook for a few more minutes until everything is heated through.
- Season with salt and pepper to taste.
- Serve the stir-fry hot and enjoy!
