Ingredients
- 8 oz firm tofu, drained and cubed
- 8 oz rice noodles
- 1/2 cup shredded carrots
- 1/2 cup chopped cucumber
- 1/4 cup chopped peanuts
- 2 green onions, thinly sliced
- 1/4 cup chopped cilantro
- 1/4 cup soy sauce
- 2 tbsp rice vinegar
- 2 tbsp peanut butter
- 1 tbsp sesame oil
- 1 tbsp honey
- 1 clove garlic, minced
- 1 tsp grated ginger
- 1/4 tsp red pepper flakes
Instructions
- In a large pot, cook the rice noodles according to the package instructions. Drain and rinse with cold water.
