Tregaron Tofu And Vegetable Stir-fry

Ingredients

  • 1 block of firm tofu, cubed
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 green onions, sliced
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Press the tofu to remove excess moisture, then cut into cubes.
  2. In a small bowl, mix together the soy sauce and sesame oil. Pour the mixture over the tofu and let it marinate for 10 minutes.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated tofu and cook until golden brown on all sides. Remove the tofu from the skillet and set aside.
  4. In the same skillet, add the garlic and ginger, and sauté for 1-2 minutes.
  5. Add the bell peppers, broccoli, and snap peas to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  6. Return the tofu to the skillet, add the green onions, and toss everything together. Season with salt and pepper to taste.
