Tregaron Tofu and Vegetable Stir-Fry is a delicious and healthy dish from the Cuisine of Ceredigion. This stir-fry is packed with fresh vegetables and tofu, making it a nutritious and satisfying meal.
Ingredients
- 1 block of firm tofu, cubed
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 green onions, sliced
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- Press the tofu to remove excess moisture, then cut into cubes.
- In a small bowl, mix together the soy sauce and sesame oil. Pour the mixture over the tofu and let it marinate for 10 minutes.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated tofu and cook until golden brown on all sides. Remove the tofu from the skillet and set aside.
- In the same skillet, add the garlic and ginger, and sauté for 1-2 minutes.
- Add the bell peppers, broccoli, and snap peas to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- Return the tofu to the skillet, add the green onions, and toss everything together. Season with salt and pepper to taste.
- Remove from heat and serve the Tregaron Tofu and Vegetable Stir-Fry hot.
