Tregaron Tofu Noodle Soup

Ingredients

  • 1 block of firm tofu, cubed
  • 8 cups vegetable broth
  • 2 cups sliced shiitake mushrooms
  • 1 cup sliced carrots
  • 1 cup chopped bok choy
  • 8 oz rice noodles
  • 3 cloves garlic, minced
  • 1 tbsp grated ginger
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable broth over medium heat.
  2. Add the tofu, shiitake mushrooms, carrots, garlic, and ginger to the pot. Simmer for 15 minutes.
  3. Add the rice noodles and bok choy to the pot. Cook for an additional 5-7 minutes, or until the noodles are tender.
  4. Stir in the soy sauce, sesame oil, and green onions. Season with salt and pepper to taste.
  5. Serve the Tregaron Tofu Noodle Soup hot, garnished with extra green onions if desired.
