Ingredients
- 1 block of firm tofu, cubed
- 8 cups vegetable broth
- 2 cups sliced shiitake mushrooms
- 1 cup sliced carrots
- 1 cup chopped bok choy
- 8 oz rice noodles
- 3 cloves garlic, minced
- 1 tbsp grated ginger
- 2 tbsp soy sauce
- 1 tsp sesame oil
- 1/4 cup chopped green onions
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable broth over medium heat.
- Add the tofu, shiitake mushrooms, carrots, garlic, and ginger to the pot. Simmer for 15 minutes.
- Add the rice noodles and bok choy to the pot. Cook for an additional 5-7 minutes, or until the noodles are tender.
- Stir in the soy sauce, sesame oil, and green onions. Season with salt and pepper to taste.
- Serve the Tregaron Tofu Noodle Soup hot, garnished with extra green onions if desired.
