Tregaron Tofu Stir-fry
Tregaron Tofu Stir-Fry is a delicious and healthy dish from the Cuisine of Ceredigion. This flavorful stir-fry is packed with fresh vegetables and tofu, making it a perfect option for a quick and nutritious meal.
Ingredients
- 1 block of firm tofu, drained and cubed
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon cornstarch
- 1 tablespoon vegetable oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- Salt and pepper to taste
- Cooked rice or noodles for serving
Instructions
- In a bowl, combine the cubed tofu, soy sauce, sesame oil, and cornstarch. Toss to coat the tofu evenly.
- Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the tofu and cook until golden and crispy. Remove the tofu from the skillet and set aside.
- In the same skillet, add the bell peppers, broccoli, and snap peas. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- Add the garlic and ginger to the skillet and cook for an additional 1-2 minutes.
- Return the tofu to the skillet and toss everything together. Season with salt and pepper to taste.
- Serve the stir-fry over cooked rice or noodles.
