Tregaron Tofu Stir-fry

Ingredients

  • 1 block of firm tofu, drained and cubed
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • Salt and pepper to taste
  • Cooked rice or noodles for serving

Instructions

  1. In a bowl, combine the cubed tofu, soy sauce, sesame oil, and cornstarch. Toss to coat the tofu evenly.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the tofu and cook until golden and crispy. Remove the tofu from the skillet and set aside.
  3. In the same skillet, add the bell peppers, broccoli, and snap peas. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  4. Add the garlic and ginger to the skillet and cook for an additional 1-2 minutes.
  5. Return the tofu to the skillet and toss everything together. Season with salt and pepper to taste.
  6. Serve the stir-fry over cooked rice or noodles.
