Trey Chean Choun (spicy Lemongrass Shrimp)

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 2 stalks lemongrass, white part only, finely chopped
  • 1 red chili, thinly sliced
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon sugar
  • 1/2 cup chicken broth
  • 1/4 cup fresh basil leaves
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pan over medium heat.
  2. Add the garlic, lemongrass, and red chili. Sauté for 2-3 minutes until fragrant.
  3. Add the shrimp, fish sauce, soy sauce, and sugar. Cook for 2-3 minutes until the shrimp turn pink.
  4. Pour in the chicken broth and simmer for 5 minutes.
  5. Stir in the fresh basil leaves and season with salt and pepper.
