Triesen Tomato and Basil Risotto (Trieser Tomaten-Basilikum-Risotto)

Ingredients
- 1 1/2 cups Arborio rice
- 4 cups vegetable broth
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup white wine
- 1 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent.
- Add the Arborio rice to the pot and stir to coat the rice with the oil. Cook for 1-2 minutes.
- Pour in the white wine and cook until it has been absorbed by the rice.
- Gradually add the vegetable broth, 1/2 cup at a time, stirring frequently and allowing each addition to be absorbed before adding more.
- Once the rice is creamy and tender, stir in the grated Parmesan cheese, cherry tomatoes, and fresh basil. Season with salt and pepper to taste.
- Remove from heat and let the risotto rest for a few minutes before serving.
