Triglav Mountain Mushroom Stew (Triglavski Gobov Golaž)

Ingredients

  • 500g mixed fresh mushrooms, sliced
  • 2 onions, finely chopped
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 red bell pepper, diced
  • 2 tomatoes, chopped
  • 1 tsp sweet paprika
  • 1/2 tsp dried thyme
  • 1/2 tsp caraway seeds
  • Salt and pepper to taste
  • 500ml vegetable broth
  • 2 tbsp chopped fresh parsley

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onions and garlic, and sauté until they are soft and translucent.
  2. Add the mushrooms and bell pepper to the pot, and cook until the mushrooms release their liquid and start to brown.
  3. Stir in the tomatoes, sweet paprika, thyme, caraway seeds, salt, and pepper. Cook for another 5 minutes.
  4. Pour in the vegetable broth and bring the stew to a simmer. Let it cook for 30-40 minutes, stirring occasionally.
  5. Once the stew has thickened and the flavors have melded together, remove it from the heat and stir in the fresh parsley.
  6. Serve the Triglavski Gobov Golaž hot, garnished with additional parsley if desired.
