Triglav Mountain Mushroom Stew (Triglavski Gobov Golaž)
Triglavski Gobov Golaž, or Triglav Mountain Mushroom Stew, is a hearty and flavorful dish that originates from the beautiful country of Slovenia. This stew is packed with earthy mushrooms, aromatic herbs, and savory spices, making it a perfect comfort food for chilly days.
Ingredients
- 500g mixed fresh mushrooms, sliced
- 2 onions, finely chopped
- 3 garlic cloves, minced
- 2 tbsp olive oil
- 1 red bell pepper, diced
- 2 tomatoes, chopped
- 1 tsp sweet paprika
- 1/2 tsp dried thyme
- 1/2 tsp caraway seeds
- Salt and pepper to taste
- 500ml vegetable broth
- 2 tbsp chopped fresh parsley
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onions and garlic, and sauté until they are soft and translucent.
- Add the mushrooms and bell pepper to the pot, and cook until the mushrooms release their liquid and start to brown.
- Stir in the tomatoes, sweet paprika, thyme, caraway seeds, salt, and pepper. Cook for another 5 minutes.
- Pour in the vegetable broth and bring the stew to a simmer. Let it cook for 30-40 minutes, stirring occasionally.
- Once the stew has thickened and the flavors have melded together, remove it from the heat and stir in the fresh parsley.
- Serve the Triglavski Gobov Golaž hot, garnished with additional parsley if desired.
