Ingredients
- 1 kg venison, cubed
- 2 onions, chopped
- 3 garlic cloves, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 2 tbsp flour
- 2 cups beef broth
- 1 cup red wine
- 2 bay leaves
- 1 tsp paprika
- 1/2 tsp caraway seeds
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions
- Season the venison with salt and pepper.
- Heat the vegetable oil in a large pot over medium heat. Brown the venison in batches and set aside.
- Add the onions, garlic, carrots, and celery to the pot. Cook until the vegetables are softened.
- Sprinkle the flour over the vegetables and stir to coat.
- Pour in the beef broth and red wine, stirring to combine.
- Return the venison to the pot. Add the bay leaves, paprika, and caraway seeds. Season with salt and pepper.
- Simmer the stew over low heat for 2 hours, or until the venison is tender.
- Adjust the seasoning if needed and serve hot.
