Triglav Mountain Venison Stew (Triglavski Goveji Golaž)

Ingredients

  • 1 kg venison, cubed
  • 2 onions, chopped
  • 3 garlic cloves, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 2 tbsp flour
  • 2 cups beef broth
  • 1 cup red wine
  • 2 bay leaves
  • 1 tsp paprika
  • 1/2 tsp caraway seeds
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. Season the venison with salt and pepper.
  2. Heat the vegetable oil in a large pot over medium heat. Brown the venison in batches and set aside.
  3. Add the onions, garlic, carrots, and celery to the pot. Cook until the vegetables are softened.
  4. Sprinkle the flour over the vegetables and stir to coat.
  5. Pour in the beef broth and red wine, stirring to combine.
  6. Return the venison to the pot. Add the bay leaves, paprika, and caraway seeds. Season with salt and pepper.
  7. Simmer the stew over low heat for 2 hours, or until the venison is tender.
  8. Adjust the seasoning if needed and serve hot.
