Ingredients

  • 1 lb mixed dried fruits (raisins, currants, prunes, cherries)
  • 1 cup rum
  • 1 cup butter
  • 1 cup brown sugar
  • 4 eggs
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp mixed spice (cinnamon, nutmeg, clove)
  • 1 cup chopped mixed nuts (almonds, walnuts)

Instructions

  1. Soak the dried fruits in rum for at least 24 hours, or up to a week, to allow the fruits to absorb the rum.
  2. Cream the butter and sugar together until light and fluffy.
  3. Beat in the eggs, one at a time, until well combined.
  4. Sift the flour, baking powder, and mixed spice together, then fold into the creamed mixture.
  5. Add the soaked fruits and chopped nuts to the batter and mix until evenly distributed.
  6. Preheat the oven to 300°F (150°C) and line a cake pan with parchment paper.
  7. Pour the batter into the prepared pan and bake for 3-4 hours, or until a skewer inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Once cooled, brush the top of the cake with additional rum for extra flavor.
