Trini Corn Soup Carnival

Ingredients

  • 2 cups corn kernels
  • 1 lb stewing beef, cut into small pieces
  • 1 cup diced pumpkin
  • 1 cup diced carrots
  • 1 cup diced potatoes
  • 1 cup diced sweet potato
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 scotch bonnet pepper, whole
  • 1 tbsp fresh thyme leaves
  • 6 cups beef or vegetable broth
  • Salt and pepper to taste
  • 2 tbsp oil

Instructions

  1. In a large pot, heat the oil over medium heat. Add the beef and cook until browned on all sides.
  2. Add the onions and garlic, and sauté until the onions are translucent.
  3. Add the corn, pumpkin, carrots, potatoes, and sweet potatoes to the pot. Stir to combine with the beef and onions.
  4. Pour in the broth and add the whole scotch bonnet pepper and thyme leaves. Season with salt and pepper.
  5. Bring the soup to a boil, then reduce the heat and let it simmer for about 45 minutes, or until the vegetables are tender and the flavors have melded together.
  6. Remove the scotch bonnet pepper before serving.
