Trini Corn Soup Carnival
Trini Corn Soup Carnival is a popular street food in Trinidad and Tobago, especially during the annual Carnival celebration. This hearty and flavorful soup is perfect for warming up on a cool evening or enjoying as a satisfying meal.
Ingredients
- 2 cups corn kernels
- 1 lb stewing beef, cut into small pieces
- 1 cup diced pumpkin
- 1 cup diced carrots
- 1 cup diced potatoes
- 1 cup diced sweet potato
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 scotch bonnet pepper, whole
- 1 tbsp fresh thyme leaves
- 6 cups beef or vegetable broth
- Salt and pepper to taste
- 2 tbsp oil
Instructions
- In a large pot, heat the oil over medium heat. Add the beef and cook until browned on all sides.
- Add the onions and garlic, and sauté until the onions are translucent.
- Add the corn, pumpkin, carrots, potatoes, and sweet potatoes to the pot. Stir to combine with the beef and onions.
- Pour in the broth and add the whole scotch bonnet pepper and thyme leaves. Season with salt and pepper.
- Bring the soup to a boil, then reduce the heat and let it simmer for about 45 minutes, or until the vegetables are tender and the flavors have melded together.
- Remove the scotch bonnet pepper before serving.
