Trini Curry Explosion

Ingredients
- 2 lbs chicken, cut into pieces
- 2 tbsp curry powder
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp ginger, grated
- 1 scotch bonnet pepper, chopped
- 2 potatoes, peeled and cubed
- 1 cup coconut milk
- 2 cups chicken broth
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- In a bowl, mix the chicken pieces with curry powder, salt, and pepper. Let it marinate for 15 minutes.
- In a large pot, heat the vegetable oil over medium heat. Add the onion, garlic, ginger, and scotch bonnet pepper. Sauté until fragrant.
- Add the marinated chicken to the pot and cook until browned.
- Pour in the coconut milk and chicken broth. Add the potatoes and bring to a simmer. Cover and cook for 30 minutes, or until the chicken is tender and the potatoes are cooked through.
- Adjust seasoning with salt and pepper, if needed. Serve hot with rice or roti.
