Trini Curry Explosion

Ingredients

  • 2 lbs chicken, cut into pieces
  • 2 tbsp curry powder
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 scotch bonnet pepper, chopped
  • 2 potatoes, peeled and cubed
  • 1 cup coconut milk
  • 2 cups chicken broth
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix the chicken pieces with curry powder, salt, and pepper. Let it marinate for 15 minutes.
  2. In a large pot, heat the vegetable oil over medium heat. Add the onion, garlic, ginger, and scotch bonnet pepper. Sauté until fragrant.
  3. Add the marinated chicken to the pot and cook until browned.
  4. Pour in the coconut milk and chicken broth. Add the potatoes and bring to a simmer. Cover and cook for 30 minutes, or until the chicken is tender and the potatoes are cooked through.
  5. Adjust seasoning with salt and pepper, if needed. Serve hot with rice or roti.
