Trini Doubles Dip

Trini Doubles is a popular street food in Trinidad and Tobago, consisting of two baras (flat fried bread) filled with curried chickpeas. This recipe puts a spin on the classic dish by turning it into a delicious dip that can be enjoyed with chips or crackers.

Trini Doubles Dip

Ingredients

  • 2 cups canned chickpeas, drained and rinsed
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp curry powder
  • 1/2 tsp ground cumin
  • 1/2 tsp turmeric
  • 1/4 tsp cayenne pepper
  • Salt to taste
  • 1/4 cup water
  • 1/4 cup chopped cilantro
  • 1 lime, juiced
  • 1/4 cup tamarind chutney
  • 1/4 cup cucumber, diced
  • 1/4 cup mango, diced
  • 1/4 cup Scotch bonnet pepper, finely chopped (optional for heat)
  • 1 cup plain yogurt or vegan yogurt
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste

Instructions

  1. In a pan, heat some oil and sauté the onion and garlic until softened.
  2. Add the curry powder, ground cumin, turmeric, cayenne pepper, and salt. Cook for 1-2 minutes until fragrant.
  3. Add the chickpeas and water. Simmer for 5-7 minutes until the chickpeas are coated in the curry mixture.
  4. Remove from heat and mash the chickpeas slightly with a fork or potato masher. Stir in the cilantro and lime juice.
  5. In a separate bowl, mix the yogurt with cumin, paprika, salt, and pepper.
  6. Spread the curried chickpeas in a serving dish. Top with tamarind chutney, diced cucumber, mango, and Scotch bonnet pepper if using.
  7. Drizzle the spiced yogurt over the toppings.
  8. Serve the Trini Doubles Dip with chips or crackers.
