Trini Doubles Dip
Trini Doubles is a popular street food in Trinidad and Tobago, consisting of two baras (flat fried bread) filled with curried chickpeas. This recipe puts a spin on the classic dish by turning it into a delicious dip that can be enjoyed with chips or crackers.
Ingredients
- 2 cups canned chickpeas, drained and rinsed
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp curry powder
- 1/2 tsp ground cumin
- 1/2 tsp turmeric
- 1/4 tsp cayenne pepper
- Salt to taste
- 1/4 cup water
- 1/4 cup chopped cilantro
- 1 lime, juiced
- 1/4 cup tamarind chutney
- 1/4 cup cucumber, diced
- 1/4 cup mango, diced
- 1/4 cup Scotch bonnet pepper, finely chopped (optional for heat)
- 1 cup plain yogurt or vegan yogurt
- 1 tsp ground cumin
- 1/2 tsp paprika
- Salt and pepper to taste
Instructions
- In a pan, heat some oil and sauté the onion and garlic until softened.
- Add the curry powder, ground cumin, turmeric, cayenne pepper, and salt. Cook for 1-2 minutes until fragrant.
- Add the chickpeas and water. Simmer for 5-7 minutes until the chickpeas are coated in the curry mixture.
- Remove from heat and mash the chickpeas slightly with a fork or potato masher. Stir in the cilantro and lime juice.
- In a separate bowl, mix the yogurt with cumin, paprika, salt, and pepper.
- Spread the curried chickpeas in a serving dish. Top with tamarind chutney, diced cucumber, mango, and Scotch bonnet pepper if using.
- Drizzle the spiced yogurt over the toppings.
- Serve the Trini Doubles Dip with chips or crackers.
