Ingredients
- 3 lbs oxtail, cut into pieces
- 2 tbsp vegetable oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tomatoes, diced
- 1 bell pepper, sliced
- 2 sprigs thyme
- 2 bay leaves
- 1 scotch bonnet pepper, whole
- 3 cups beef broth
- 1 cup red wine
- Salt and pepper to taste
Instructions
- Season the oxtail pieces with salt and pepper.
- Heat the vegetable oil in a large pot over medium-high heat. Brown the oxtail pieces on all sides, then remove and set aside.
- Add the onion, garlic, tomatoes, and bell pepper to the pot. Cook until the vegetables are softened.
- Return the oxtail to the pot and add thyme, bay leaves, scotch bonnet pepper, beef broth, and red wine.
- Bring the stew to a boil, then reduce the heat to low and let it simmer for 3 hours, or until the oxtail is tender.
- Season with additional salt and pepper if needed, then serve hot.
