Ingredients

  • 3 lbs oxtail, cut into pieces
  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tomatoes, diced
  • 1 bell pepper, sliced
  • 2 sprigs thyme
  • 2 bay leaves
  • 1 scotch bonnet pepper, whole
  • 3 cups beef broth
  • 1 cup red wine
  • Salt and pepper to taste

Instructions

  1. Season the oxtail pieces with salt and pepper.
  2. Heat the vegetable oil in a large pot over medium-high heat. Brown the oxtail pieces on all sides, then remove and set aside.
  3. Add the onion, garlic, tomatoes, and bell pepper to the pot. Cook until the vegetables are softened.
  4. Return the oxtail to the pot and add thyme, bay leaves, scotch bonnet pepper, beef broth, and red wine.
  5. Bring the stew to a boil, then reduce the heat to low and let it simmer for 3 hours, or until the oxtail is tender.
  6. Season with additional salt and pepper if needed, then serve hot.
