Trini Pelau is a classic one-pot dish from Trinidad and Tobago that's perfect for a party. It's a flavorful combination of chicken, rice, pigeon peas, and vegetables, all cooked together in a delicious blend of coconut milk and spices.

Ingredients

  • 2 lbs chicken, cut into pieces
  • 2 cups rice
  • 1 can pigeon peas, drained and rinsed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 carrots, diced
  • 1 cup coconut milk
  • 2 tbsp brown sugar
  • 2 tbsp soy sauce
  • 2 tbsp oil
  • 3 cups chicken broth
  • 1 scotch bonnet pepper, whole
  • 1 tsp thyme
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the oil over medium heat. Add the chicken pieces and brown on all sides.
  2. Add the onion, garlic, and bell pepper to the pot and cook until the vegetables are softened.
  3. Stir in the rice, pigeon peas, carrots, coconut milk, brown sugar, soy sauce, thyme, paprika, salt, and pepper.
  4. Pour in the chicken broth and add the whole scotch bonnet pepper.
  5. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 30-40 minutes, or until the rice is cooked and the liquid is absorbed.
  6. Remove the scotch bonnet pepper before serving.
