Trini Pelau Party
Trini Pelau is a classic one-pot dish from Trinidad and Tobago that's perfect for a party. It's a flavorful combination of chicken, rice, pigeon peas, and vegetables, all cooked together in a delicious blend of coconut milk and spices.
Ingredients
- 2 lbs chicken, cut into pieces
- 2 cups rice
- 1 can pigeon peas, drained and rinsed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 carrots, diced
- 1 cup coconut milk
- 2 tbsp brown sugar
- 2 tbsp soy sauce
- 2 tbsp oil
- 3 cups chicken broth
- 1 scotch bonnet pepper, whole
- 1 tsp thyme
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- In a large pot, heat the oil over medium heat. Add the chicken pieces and brown on all sides.
- Add the onion, garlic, and bell pepper to the pot and cook until the vegetables are softened.
- Stir in the rice, pigeon peas, carrots, coconut milk, brown sugar, soy sauce, thyme, paprika, salt, and pepper.
- Pour in the chicken broth and add the whole scotch bonnet pepper.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 30-40 minutes, or until the rice is cooked and the liquid is absorbed.
- Remove the scotch bonnet pepper before serving.
