Ingredients

  • 2 lbs pig trotters, cleaned and cut into pieces
  • 1 cup lime juice
  • 1 cup water
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 1 hot pepper, thinly sliced
  • 1 cucumber, thinly sliced
  • 1/4 cup chopped chives
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste

Instructions

  1. In a large pot, combine the pig trotters, lime juice, and water. Bring to a boil, then reduce heat and simmer for 1.5 hours, or until the trotters are tender.
  2. Add the onion, garlic, and hot pepper to the pot and continue to simmer for another 15 minutes.
  3. Remove the pot from the heat and let it cool to room temperature.
  4. Once cooled, add the cucumber, chives, and cilantro to the pot. Season with salt and pepper to taste.
  5. Refrigerate the souse for at least 2 hours before serving to allow the flavors to meld together.
