Trini Souse Soiree
Trini Souse Soiree is a traditional Trinidadian dish that is perfect for a gathering or party. This tangy and spicy pickled pig trotters dish is a popular street food and is often enjoyed at social events and celebrations.
Ingredients
- 2 lbs pig trotters, cleaned and cut into pieces
- 1 cup lime juice
- 1 cup water
- 1 onion, sliced
- 4 cloves garlic, minced
- 1 hot pepper, thinly sliced
- 1 cucumber, thinly sliced
- 1/4 cup chopped chives
- 1/4 cup chopped cilantro
- Salt and pepper to taste
Instructions
- In a large pot, combine the pig trotters, lime juice, and water. Bring to a boil, then reduce heat and simmer for 1.5 hours, or until the trotters are tender.
- Add the onion, garlic, and hot pepper to the pot and continue to simmer for another 15 minutes.
- Remove the pot from the heat and let it cool to room temperature.
- Once cooled, add the cucumber, chives, and cilantro to the pot. Season with salt and pepper to taste.
- Refrigerate the souse for at least 2 hours before serving to allow the flavors to meld together.
