Ingredients
- 2 lbs pork shoulder, cut into chunks
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 2 tomatoes, chopped
- 2 tbsp brown sugar
- 1/4 cup soy sauce
- 1/4 cup ketchup
- 1 cup chicken broth
- 2 tbsp vegetable oil
- 1 tsp thyme
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the pork chunks and brown on all sides, then remove from the pot and set aside.
- In the same pot, sauté the onion, garlic, and bell pepper until softened.
- Stir in the tomatoes, brown sugar, soy sauce, ketchup, thyme, and paprika. Cook for 2 minutes.
- Return the pork to the pot and add the chicken broth. Season with salt and pepper.
- Bring the mixture to a boil, then reduce the heat to low and simmer for 1.5 to 2 hours, until the pork is tender and the sauce has thickened.
