Trini Tamarind Bbq Ribs

Ingredients

  • 2 lbs pork ribs
  • 1 cup tamarind pulp
  • 1/2 cup brown sugar
  • 1/4 cup soy sauce
  • 3 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 275°F (135°C).
  2. In a bowl, mix the tamarind pulp, brown sugar, soy sauce, garlic, ginger, cayenne pepper, salt, and pepper to make the marinade.
  3. Place the ribs in a large baking dish and pour the marinade over them, making sure to coat the ribs evenly.
  4. Cover the dish with foil and bake for 1.5 hours, then remove the foil and bake for an additional 30 minutes, basting the ribs with the marinade every 10 minutes.
  5. Once the ribs are tender and caramelized, remove them from the oven and let them rest for a few minutes before serving.
