Trini Tamarind Bbq Ribs

Ingredients
- 2 lbs pork ribs
- 1 cup tamarind pulp
- 1/2 cup brown sugar
- 1/4 cup soy sauce
- 3 cloves garlic, minced
- 1 tsp ginger, grated
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
Instructions
- Preheat the oven to 275°F (135°C).
- In a bowl, mix the tamarind pulp, brown sugar, soy sauce, garlic, ginger, cayenne pepper, salt, and pepper to make the marinade.
- Place the ribs in a large baking dish and pour the marinade over them, making sure to coat the ribs evenly.
- Cover the dish with foil and bake for 1.5 hours, then remove the foil and bake for an additional 30 minutes, basting the ribs with the marinade every 10 minutes.
- Once the ribs are tender and caramelized, remove them from the oven and let them rest for a few minutes before serving.
